My Latest Tailgating Cooking Videos are Up
I shot these live last Friday afternoon here at my House.

Amateur huh? The video sure looked professional to me! I also liked the way you spoke, it was very crisp and clear, I really did have a feel like I was watching a pro at work.

lol, I have a rookie question.

Where do you usually BBQ when you are at the track?

Oh... and I went to look at your photo gallery at your Pit Crew BBQ Website. And I must say... my mouth is really watering over the meats! Makes me want to go and watch one of your videos and learn from the master and making me some steak this weekend hehe.

I am actually... Brazilian, as you must know we Brazilian love our bbq! Usually, when we make the larger cuts, we eat the meat as it's cooking, we usually cut pieces off slowly to feed the guests. As the outer part of the meat is done faster than the inside.

So, when you make cuts that are that big, like the photo shown and BBQ them, how do you prevent them from getting undercooked and also getting them not to be over burn if you cooking it entirely? Obviously the larger cuts are always the hardest to BBQ.
